1/4 cup extra virgin olive oil
1/4 cup lemon juice
2 tbsps. water
1 tbsp. soy sauce
1 tbsp. honey
1 tbsp. spicy brown mustard
1/2 tsp. salt
4 skinless, boneless chicken breast halves
4 slice provolone cheese
4 hamburger buns
Honey Mustard (recipe below)
2 tbsp. honey
2 tbsp. spicy brown mustard
Whisk honey and mustard together. About 1/4 cup
Whisk together oil, lemon juice, water, soy sauce, honey, mustard and salt.
Pour over chicken in a resealable plastic bag. Seal bag and shake to distribute marinade
evenly over chicken breasts.
Refrigerate for several hours or overnight.
Place the chicken pieces over medium-hot coals and grill that has been sprayed with
non-stick cooking spray. Turn chicken several times as it cooks, about 30 minutes.
(approximately 15 minutes per side) or until chicken is done.
Top with cheese. Serve on buns with honey mustard.
